Ingredients:
125g brown rice (long grain - preferably organic)
125g green peas (fresh or frozen)
125g drained sweetcorn
1 medium red capsicum (diced)
1 medium green capsicum (diced)
1 Salad tomato (diced)
1 Medium red onion (finely chopped)
50ml House dressing
House Dressing
fresh ground sea salt and black pepper
Instructions:
Boil the brown rice in a litre of lightly salted water for approx 25 minutes
until cooked. Drain in a sieve and thoroughly rinse in cold water. Empty the
rice into a medium sized mixing bowl.
Boil 500ml of water with a pinch of salt and sugar. Add the peas, bring
back to the boil and simmer for 2 minutes. Drain in a sieve and chill in cold
water, add the peas to the mixing bowl.
Add the sweetcorn, red and green capsicums, tomato and red onion to
the mixing bowl. Mix, add the house dressing
(House Dressing),
season with fresh ground sea salt and black pepper.
Tip: The concept is to finish with a colourful tasty salad. If need be, in future,
adjust the chopped size and quantities of the ingredients to suit.
